Arroz A La Cubana

Description: An original Filipino recipe, it is neither found in Cuba or Spain as the name may imply. This is a novel way of presenting this Filipino favorite one-dish meal. It can be served as a main meal served with rice or as a brunch course served with pandesal and hot chocolate.

Cooking Time: 1 hour

Serves 8

Ingredients:

6 pcs saging saba (plantian), peeled and sliced into ¼
¼ cup cooking oil
1 kilo potatoes, wash and scrub potatoes with a brush. Do not peel. Using a grater, run the potatoes through the coarse holes to produce strands. Soak in water with 1 tsp salt until needed
2 tsp butter
2 Tbsp garlic, minced
1 pc onion, chopped
2 pcs tomatoes, chopped
¼ kilo lean ground pork
¼ kilo ground round
2 Tbsp paprika powder
2 tsp salt
1 tsp freshly ground black pepper
2 Tbsp LEA & PERRINS Worcestershire Sauce
2 pcs chorizo de bilbao, sliced and coins
1/3 cup raisins
2 cups frozen mixed vegetables (sweet corn, diced carrots and green peas)
8 pcs eggs

Procedures:

1. Heat cooking oil in a non-stick frying pan and fry the banana pieces until lightly brown on both sides. Remove from pan and set aside.
2. Drain the grated potatoes and fry in the same pan until light brown. Keep tossing so as to cook evenly. This is called hash brown potatoes. Remove from pan and set aside.
3. Melt butter in the same pan and sauté garlic, onion and tomatoes.
4. Introduce the ground pork and stir fry until fat comes out. Use a slatted spoon and press the meat to avoid forming lumps.
5. Add the ground round beef and cook until light brown.
6. Add chorizo slices, paprika, Lea & Perrins Worcestershire Sauce, salt and pepper and mix thoroughly.
7. Mix in the raisins and mixed vegetables.
8. Using a 2" x 8" x 12" glass dish, transfer the hash brown potatoes and spread evenly.
9. Next, spread the meat mixture over the hash brown.

11. Break each egg and place it on each square, allowing the yolk to sit on the meat mixture, while allowing the white part to seep through poking the corners with a chopstick. Sprinkle with freshly grated black pepper.
12. In a pre-heated oven to 375°F , bake the dish for 10 minutes or until the eggs are cooked to the desired doneness (runny yolk or well-done). Serve hot with rice or hot pan de sal.
